Induction vs Gas Stove: Cooking Speed, Safety, and Running Cost Compared

Gas stoves dominate Pakistani kitchens because piped natural gas has been cheap and available for decades. That equation is shifting. Gas load shedding is now routine in winter across Punjab, cylinder gas prices have climbed steadily, and newer apartment buildings in Islamabad and Lahore are being designed without gas lines entirely. Induction and ceramic cookers offer an electric alternative, but the switch involves trade-offs in cookware compatibility, running cost, and cooking behaviour that most buyers do not evaluate before purchasing.

How Each Technology Heats Food

A gas stove burns natural gas or LPG to produce an open flame. Heat transfers to the cookware through direct contact with the flame and radiant heat from the burner grate. The flame is visible, adjustable in real time, and works with any type of cookware.

An induction cooker generates a magnetic field that heats the cookware itself, not the cooking surface. The glass top stays relatively cool because only the pan gets hot. This requires ferromagnetic cookware (cast iron, magnetic stainless steel). Aluminium, copper, and non-magnetic stainless steel pans will not work on induction unless they have a bonded magnetic base.

A ceramic cooker uses a resistive heating element under a glass-ceramic surface. It heats the surface, which then transfers heat to the cookware. Unlike induction, ceramic works with all cookware types but heats more slowly and retains surface heat after the element is turned off.

Cooking Speed

Induction is the fastest of the three. A litre of water reaches boiling point in roughly 3 to 4 minutes on a 2000W induction plate. The same volume takes 6 to 8 minutes on a high-flame gas burner and 8 to 10 minutes on a ceramic cooker.

The speed advantage comes from energy transfer efficiency. An induction cooker converts roughly 85 to 90 percent of electrical energy into heat in the pan. A gas burner converts 40 to 55 percent of the fuel's energy into usable heat because the flame radiates in all directions, heating the air around the pan as much as the pan itself. Ceramic cookers sit between the two at roughly 70 percent efficiency.

For tasks that require sustained high heat (deep frying, rolling boil for biryani, searing meat), induction delivers faster results with less ambient heat in the kitchen. For tasks that require gentle, uneven heat (charring a roti directly on the flame, bhunao on slow simmer), gas gives more tactile control.

Running Cost

Running cost depends on your energy source and local rates. In Pakistan, the comparison breaks down as follows.

Piped natural gas, where available and not subject to load shedding, remains the cheapest cooking fuel. At current SNGPL domestic slab rates, cooking three meals a day for a family of six costs approximately PKR 1,500 to 2,500 per month in gas charges, depending on slab and consumption tier.

Cylinder LPG (used where piped gas is unavailable or unreliable) costs significantly more. A standard 11.8 kg cylinder at current market rates runs PKR 3,200 to 3,800 and lasts roughly two to three weeks for a medium household. That puts monthly cooking fuel at PKR 5,000 to 7,500.

Electricity for an induction cooker at average domestic NEPRA tariff rates (PKR 35 to 55 per unit depending on slab) runs approximately PKR 2,500 to 4,500 per month for equivalent cooking. This makes induction cheaper than cylinder LPG but more expensive than piped natural gas.

The breakeven point is straightforward: if you rely on piped gas and it is available without significant load shedding, gas is cheaper. If you depend on LPG cylinders or experience daily gas outages that force you onto a backup anyway, induction costs less per meal.

Safety

Gas stoves carry two inherent risks that electric cookers eliminate: gas leaks and open flame.

A gas leak from a loose connection, a cracked hose, or a faulty regulator can fill an enclosed kitchen with combustible gas before anyone notices. This risk is higher in kitchens without adequate ventilation or gas detectors, which describes the majority of residential kitchens in Pakistan.

An induction cooker has no flame, no gas line, and the cooking surface stays cool to the touch outside the cookware footprint. A child touching the glass next to the active pan will not burn. A ceramic cooker surface does get hot and retains heat after cooking, so it carries a burn risk similar to a turned-off gas burner, but without the gas leak hazard.

For households with young children or elderly members, induction is the safest cooking option available.

Cookware Compatibility

This is the most common reason buyers return induction cookers. If your existing cookware is aluminium (the most common material in Pakistani kitchens) or non-magnetic stainless steel, none of it will work on induction. You will need to replace it with induction-compatible cookware, which adds PKR 5,000 to 15,000 to the upfront cost depending on how many pieces you need.

A simple test: hold a magnet to the bottom of the pan. If it sticks firmly, the pan works on induction. If it slides off or does not attract at all, it will not heat.

Ceramic cookers avoid this problem entirely. They work with aluminium, copper, stainless steel, glass, and cast iron. If cookware replacement is not in the budget, a ceramic cooker is the more practical electric option.
